Seafood Coconut Fritters


1-1/2 lbs raw fish or shrimp

1/2 cup unsweetened dried coconut

1-2 Eggs according to what type of fish you use.  The recipe said 1 for shrimp, I used 2 for Salmon

2 Green Onions chopped, or 15-20 grams of extremely fine chopped white onion

1 tsp freshly ground Ginger

1/4 tsp Salt


Coarsely chop half of the fish or shrimp, set aside.  Put all the other ingredients into a food processor, pulse until you have a chunky paste.  Add the chopped fish.

Heat enough Coconut Oil to just cover the bottom of your pan.  Drop the fritter batter by 1/4 cup into the oil.  Cook 2-3 minutes on each side until golden.  Drain on paper towels, serve hot.
