Pumpkin Muffins (or bread)

Quantity: 4 times the recipe for about 48 muffins or 4 loaves of bread

Bake at 350 Degrees


1 1/2 cups Sprouted whole wheat flour
1 cup organic pumpkin puree
1/2 cup expeller pressed coconut oil
2 eggs, beaten
1/2 cup sucanat
1/2 tsp green stevia powder (or 5 drops liquid)
1 tsp baking soda
3 Tbl water (only if needed Whole wheat flour needs more moisture than white flour)
1/2 tsp nutmeg
1/2 tsp ground ginger
1/2 tsp allspice
1 tsp cinnamon
1/4 tsp cloves
1/2 tsp of sea salt

Chocolate Chips and Walnuts optional


  1. Mix the dry ingredients in a bowl.

  2. Mix the wet ingredients in a separate bowl and then fold in the dry ingredients until smooth.

  3. Bake your wonderful loaf of healthy pumpkin bread at 350F for about 50 min for bread, 15 minutes for Muffins or until knife inserted in the center comes out clean. I find that it can overcook and be dry on less time.
