Chocolate Zucchini Cake

Bake at 325 Degrees


113 g Butter

99 g Palm Shortening

200 g Organic Cane Sugar

150 g Sucanut Sugar

1 tsp Vanilla

1 tsp Baking Powder

1/2 tsp Baking Soda

1/2 tsp Salt

2 Large Eggs

113 g Yogurt

100 g All purpose Flour

200 g Whole Wheat Pastry Flour

64 g Cocoa (Cacao Barry - Extra Brute)

3 C Zucchini (500 g)

1/2 C Mini Semi-Sweet Chocolate Chips


  1. Cream the Sugar, Butter, and Oil.

  2. Add Everything else but the flour and chocolate chips. Mix.

  3. Add flour and chocolate chips. Mix until barely combined.

  4. Bake in greased pan, use parchment paper if you want to dump it out.
