These are satisfying little candy bites. One is enough but you’ll probably eat 2 or 3. They are great to throw in for that candy treat in your school lunch or brown bag at work. Leave a little note with it saying “I love you”
1/8 c pecans 1/2 c almonds 1/2 c dates (Measured by squishing them down in the cup before chopping) 1/8 c raisins 1 Tbls coconut (this might be more like 1/4 c. I wrote 1 tbs but that doesn’t seem like much and I can’t remember what I really did 🙂 4 tsp cocoa (I used dutch processed) 1 Tbs coconut oil 1 or more drops of mint extract. Most cheap extract might us up to a lid full, but I have some supper potent mint extract so 1 drop is enough. I do really like it on the strong mint side but be careful, you can always add but you can’t take back out if you put too much.I use my food processor to grind the nuts and dates and raisins into a type of paste. Add everything else and blend well. Roll into small balls. Then I like to roll the balls in finely ground nuts and coconut. I find it best to store in the freezer but they do not need refrigeration.
