Peeling a fresh egg is challenging, but we learned a trick to make it much easier and the eggs turn out much prettier.
Boil the eggs and let them cool, even get cold in the refrigerator. When they are cold, boil a small pan of water deep enough to cover the egg.
Place one egg in the boiling water for 20-30 seconds. The heat expands the shell and the egg is still cold so it comes off easier. Then use a spoon to gently lift the shell off the egg. It works.
Deviled Eggs
Cut the eggs in half the long way, take out the yolk and place it in a bowl. Mash with a fork.
Add Homemade Mayo until creamy.
Add a small amount of Prepared Yellow Mustard and a sprinkle of celery salt.
Taste and add Salt if needed.
Scoop the yolk mixture back into the white of the eggs, sprinkle with paprika for beauty.
