I had this salad at a little local restaurant in Bountiful Utah called “Plates to Palates”. Very delightful atmosphere with very delightful food.
Heap your plate with – Spinach thin cubes of Sweet potatoes that have been softened in a skillet and slightly browned pistachio nuts Shrimp sauted with thyme grapefruit pealed sectioned and cut in bites All of thier dressings had sugar in them so I just had a squeeze of lime over the top.Fresh and surprising. I loved the pistachio grapefruit mix.
