I named this salad PF Changs Salad because that’s where I ate it, but it really was my creation. I combined different menu items and made my own dressing. I thought it was great. I put it under main dishes because it really is a whole meal, but it is also a salad.
Ingredients:
- Salad Greens
- Julienne Carrots, Jicama
- Julienne and Fried Crispy Sweet Potato or regular Potato, for a crispy garnish on top
- Wasabi Peas or Fresh Peas
- Sautéed Asparagus and Onions
- Seared Ahi sliced thin
- Brown rice, cooked – Cold or hot, great for those leftovers
- Sesame Oil
- Fresh Lime
You can add other veggies that you love such as Peppers, raw or sautéed with the asparagus, mung bean sprouts, mushrooms, avocado etc…
Sauté and sear your fish, then toss everything together. Go light on the rice, this is a salad and the rice just gives it a little bit of carbs to give that complete feeling, like 1/4-1/3 cup of rice to a large dinner plate of salad.
Sprinkle with a good tasting sesame oil and fresh lime juice for the dressing and add a little hot pepper if you like. Yum!
