Meal you say? All it is, is a sweet potato, how can that be a meal? Again I am thinking about college kids. This is quick and easy, sweet and yummy. And Inexpensive!Bake a sweet potato (the orange Yam-like ones) until soft. Maybe 30 min or so at 400 degrees. If you cut it in 1/2 and put it on some tinfoil it will cook faster and you won’t have to wash a pan. Cook it in your toaster oven or cut it into strips if you want. Sprinkle it with cinnamon, spread with butter, add some salt and pepper. Here’s the clincher, sprinkle your crunchy soaked walnuts all over it.
Now that’s yummy. It feel like dessert and it’s very healthy and satisfying.
