I am really trying, and being quite successful, to make veggies be the main dish at all of my meals. I grew up with Meat being the main dish at every meal, 3 times a day. Then would come the starch, potato, rice, noodles, etc… Then would come the veggie, usually canned or frozen. Very rarely did we eat a green salad or anything raw. Now most of what I eat is veggie and much of that is raw. I love it. It can be an expensive way to eat but it is easy to grow your own sprouts and baby greens. If you want to really have a feast for pennies you can even add a garden. Then the healthiest food becomes the cheapest.
