This is a take off of an old family recipe called Cowboy Cookies. We’ve loved them for generations but this is a healthier version and I think it is even better. I love the carmel flavor that the sucanat adds.
Cream together til fluffy: 1 cup Butter 2 c. Sucanat 2 Eggs Add: 1 tsp Salt 1 tsp Soda 1 tsp Baking Powder 2 tsp real Vanilla 1 1/3 c Sprouted Whole Wheat Flour 2-1/2 c Oatmeal (old-fashioned is best) may use popped Amaranth or a mix of both. (We used 1-1/2 cups of popped amaranth and 2 cups of oatmeal and it worked great) 1 c Unsweetened Coconut Flakes 1/2 to 1 c Dark Chocolate Chips or Dried Currants or Raisins (Optional) Bake at 350 degrees for 10 min.Enjoy 🙂
