#31 Noah’s Granola (By Susan)

Here’s my favorite granola.  I didn’t know what to name it and Noah came to mind.  He’s my son who learned how to make granola when he was 12.  Now he makes it for the family and we love it!

Noah’s Granola

24 cups (2750 g) Old Fashioned Oats
1 1/2 cups (200 g) Walnuts (Soaked)
6 cups (300 g) Unsweetened coconut
1 1/2 cups (275 g)  Sunflower or pumpkin seeds
1 1/2 cups (250 g) Almonds (soaked)
2 cups dried Currants (don’t bake, add after)

Put in blender or food processor ( may need to do it in two batches)
1 cup coconut Oil (350 g)
4 cups (700-800 g) Dates
1 cup water (300-500 g)

Mix all together until lumps are gone.  Bake about 4 cups at a time on cookie sheet 325 degrees about 10? Min until browned
Makes one large silver popcorn bowl, double in two bowls
Don’t know how long it lasts, we eat it too fast!

Less Oat Granola

900 g Rolled Oats

400 g Walnuts

600 g Coconut

500 g Sunflower seeds

600 g Almonds

dates oil water as above
