This is definitely not just for breakfast. And it’s one of the yummiest granolas that I have had. I love the crunch that the sprouted buckwheat gives. I love to eat it dry as a snack, over my yogurt or with milk, not to mention on ice-cream!
4 cups soaked dried oatgroats or oatmeal 6 cups Sprouted dried Buckwheat 4 cups Pecans, Walnuts, or Almonds or your favorite combination 4 cups unsweetened Coconut 1/2 cup Chia Put in blender or food processor: 1-1/2 cups Dates 1/2 cup water 1/4 cup Oil, olive or coconut Dried Currants (add after baking)Mix the date mixture into the dry mixture and mix well. I use my hands and break up the clumps, stirring until it’s well combined. Place 4 cups of the granola on a cookie sheet and bake at 325° for about 10 min. stirring in the middle. Bake until it is the crunchiness that you like.
