I have a wonderful bosch mixer so making large quantities of bread is quick and easy. If you don’t have one, ask for one for Christmas or save your change in a jar until you can buy yourself one. They are so worth it!
The next thing you need is a wheat grinder so you can grind your own fresh flour when you need it. I love my whispermill and if you are making bread in your bosch your hubby might just buy you a whispermill for Mothers day. You save a lot of money making your own delicious bread.
7 cups hot water 2 heaping Tbls yeast 1 1/2 Tbls salt 1/2 fresh lemon juiced – this is for the Vitamin C. You can use powder or crush up a Vit C pill if you want. It really helps the bread but is not necessary. 1/3 cup honey or other sweetener of your choice or leave it out if you want. 1/3 cup oil – I use olive oil 17 cups freshly ground whole wheat flour (I like hard white wheat the best, but hard red works great too.)Mix in your mixer for about 8-10 min to knead. This makes 4 enormous loaves of bread. you will need very large pans or break down to 5-6 loaves for smaller pans. Rise until doubled in size. Cook at 350 degrees for 30-35 min.
I have used spelt and liked it. Also 1/2 sprouted white wheat and 1/2 unsprouted white wheat, that worked too.
This makes great bread bowls for soup too.
Don’t want 4 loaves and don’t have a mixer? You can make this by hand in a bowl, it’s very therapeutic to knead dough!
